Abstract (English)	Bolivia has a population of 7.591.725 people, where 28.3% of children younger than 3 years old are under malnutrition conditions, and the 69.8% of the people live in poverty. One of the solutions to the malnutrition problem of children is the elaboration of a cereal that will provide a better and more balanced nutritional diet. The thesis studies the production of a cereal-leguminous mixture with similar nutritional characteristics to a local product (Cerelac). It is suggested the elaboration of high quality nutritional mixtures. The nutritional mixtures will be utilized as supplements for children from the age of six. For this purpose, raw materials were previously selected considering their protein value as well as cost (soybeans, Cuban corn, rice, wheat, and barley). Mixtures were made and tested. Finally, studies of industrial feasibility of a small instant vegetable mixture plant were performed.
Abstract (Spanish)	En el presente trabajo, se plantea elaborar mezclas vegetales de alta calidad nutricional y de consumo instantáneo. Para ser utilizada como suplemento nutricional en la alimentación de niños a partir de los 6 meses de edad. Para lo cual inicialmente se selecciono la materia prima, en función a su alto contenido proteico y bajo precio (soya, tarhui, maiz cubano, arroz, trigo, cebada). Se formulaton mezclas con carateristical nutricionales similares al patrón de referencía fueron sometidos a pruebas de análisis sensorial (test de calidad sensorial y test de aceptabilidad y preferencia), De estas mezclas se seleccionaron cuatro mezclas (WA1, WA2, WA5 y el patrón de referencia WA7) como mujeres mezclas terminadas. Las mismas fueron sometidas a an*lisis bromatológico y pruebas biológicas con animales de laboratorio. Finalmente se efectuó el estudio de viabilidad industrial de una pequeña planta procesadora de mezclas vegetales instantaneas.
