Abstract (English)	Currently in Ecuador, the evil and deteriorated nourishment constitutes a serious problem influenced by the high to prevail of mainutrition that each day is aggravated. Therefore it Is important to know the adequate utilization of the regional products and new technological alternatives that help to reduce this problem. The accomplished investigation pipe as objective to elaborate noodles noodies craftsmen enriched with kidney bean load fine to contribute to improve the quality protein of the diet inn the communities of Cuambo and the Corner; this study was effected after accomplishing a consumption and production diagnosis of foods by the Institute BENSON. The accomplished work understood two phases, one of field and other of investigation; within the first was accomplished the elaboration and noodles noodies tasting through the incorporation to the paste mixture of kidney bean as source of protein and mineral and wheat flour as source of carbohydrates. For the effect was accomplished three classes of noodles noodies with different percentages of matter outweighs (kidney bean beautiful load, wheat flour thebaker, egg), salt 1% as taste and suffícient sufficient quantity of drinking water for the three types of mixture, accomplished ín in form artisan. The evaluation of the investigation was effected with the following analysis: organof the enriched and cooked noodle, application of acceptability surveys to the participants, physical analysis - quimic. The better acceptance treatment by the participants of this investigation was the treatment three, corresponding to the combinations of kidney bean 30%, wheat flour 59%, hen egg 10% and table salt 1% and drinking water the necessary quantity.
Abstract (Spanish)	Actualmente en en el Ecuador, la mala y deteriorada alimentación constituye un grave problema, influenciado por las altas prevalencias de desnutrición que cada día se agrava. Por lo que es importante conocer la adecuada utilización de los productos regionales y nuevas alternativas tecnológicas que ayuden a disminuir este problema. La investigación realizada tubo como objetivo elaborar fideos artesanalesenriquecidos con fréjol cargabello para contribuir a mejorar la calidad proteica de la dieta en las comunidades de Cuambo y la Rinconada; este estudio se efectuó luego de realizar un diagnóstico de consumo y producción de alimentos por elInstituto BENSON. El trabajo realizado comprendió dos fases, una de campo y otra de investigación; dentro de la primera se realizó la elaboración y degustación de fideos mediante laincorporación a la mezcla de pasta de fréjol como fuente de proteína y minerales y harina de trigo como fuente de carbohidratos. Para el efecto se realizó tres clases de fideos con diferentes porcentajes de materia primafréjol (cargabello, harina de trigo la panadera, huevo), sal el 1 % como saborizante y cantidad suficiente de agua potable para los tres tipos de mezcla, realizados en forma artesanal. La evaluación de la investigación se efectuó con los siguientes análisis: organoléptico, del fideo enriquecido y cocido, aplicación de encuestas de aceptabilidad a las participantes y análisis físico-químico. El tratamiento de mejor aceptación por los participantes de esta investigación fue el tratamiento tres, correspondiendo a las combinaciones de fréjol 30%, harina detrigo 59%., huevo de gallina 10%, sal de mesa el 1 % y agua potable la cantidad necesaria.
